"12 Imperial Stouts, 12 Days of Xmas and 12 exceptional breweries, holy heck! We were thrilled when Matt and Ant asked us to be part of the inaugural 12 Imperial Stouts of Xmas pack. Big, malty beasts are one of our favourite things to make, and what a fun pack to be a part of. We wanted to make this something really special, so we have submitted our very first barrel aged beer. Scouting some Granite Belt tempranillo hogsheads, we figured a big, ballsy Russian Imperial Stout would marry well with the oak and coconut from these soft barrels.
Starting with 12 malts (seems to be the number), we layered toast, biscuit, caramel, toffee, cacao and dark chocolate flavours together to give some serious malty depth. The hops were kept low, with some Bravo for clean bitterness and just a bees dick of Sabro, to accentuate that woody thing. Fermented low and slow, we wanted clean flavours only. Followed by over 2 months as a first fill in these hogsheads, to give oak, mouthfeel and a touch of plum and coconut. Integration, finesse and skill is what we wanted to achieve. We’ve done the crazy gimmick beer thing and here we want to show our hand at balance. And at 11%, we had to work overtime to get that balance spot on." - Working Title Brewing Co. #SupportLocal.
